Fish steamed in banana leaves reflects a Central African cooking technique using leaves as natural, biodegradable vessels long before modern cookware existed. It's practiced widely among riverine communities of the Congo Basin, where fish and banana plants are abundant.

Ingredients

  • 4 whole white fish fillets (tilapia or similar)
  • 4 banana leaves (or foil)
  • 2 tomatoes, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 hot chili, chopped
  • 2 tbsp palm oil
  • juice of 1 lemon
  • salt and pepper, to taste
  • fresh herbs (parsley or basil)

Instructions

  1. 1Season fish fillets with salt, pepper, and lemon juice.
  2. 2Soften banana leaves briefly over an open flame or in hot water to make them pliable.
  3. 3Mix tomatoes, onion, garlic, chili, and palm oil in a bowl to make a light sauce.
  4. 4Place each fillet on a banana leaf, top with a spoonful of the tomato mixture and fresh herbs.
  5. 5Fold the banana leaf tightly around the fish to form a sealed packet, securing with kitchen twine.
  6. 6Steam the packets over simmering water, or grill over medium coals, for 20-25 minutes until fish is cooked through.
  7. 7Unwrap carefully and serve directly from the leaf with rice or fufu.
