Pescado a la Veracruzana

Ingredients

  • 6 red snapper fillets
  • 3 tbsp olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 4 tomatoes, diced
  • 1/2 cup green olives, sliced
  • 2 tbsp capers
  • 2 pickled jalapeños, sliced
  • 1 bay leaf
  • 1 tsp dried oregano
  • Salt, to taste
  • White rice, for serving

Instructions

  1. 1Season the fish fillets with salt and set aside.
  2. 2Heat olive oil in a large skillet and sauté onion and garlic until softened.
  3. 3Add tomatoes, olives, capers, jalapeños, bay leaf, and oregano, and simmer 15 minutes.
  4. 4Nestle the fish fillets into the sauce, spooning some over the top.
  5. 5Cover and simmer 10-12 minutes until the fish flakes easily.
  6. 6Remove bay leaf and serve the fish topped with sauce alongside white rice.
