Zhajiangmian (Beijing Fried Sauce Noodles)

Ingredients

  • 1 lb fresh wheat noodles
  • 1/2 lb ground pork
  • 3 tbsp sweet bean sauce (tianmianjiang)
  • 1 tbsp yellow soybean paste
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 cucumber, julienned
  • 1/2 cup radish, julienned
  • 3 scallions, sliced
  • 2 tbsp vegetable oil

Instructions

  1. 1Stir-fry ground pork in oil over medium heat until browned and rendered.
  2. 2Add garlic and ginger and cook until fragrant.
  3. 3Stir in sweet bean sauce, soybean paste, Shaoxing wine, and sugar, then simmer for 8-10 minutes until thick and glossy, adding a splash of water if it gets too dry.
  4. 4Boil the noodles until just tender, then drain well.
  5. 5Divide noodles among bowls and top with julienned cucumber and radish.
  6. 6Spoon the fried sauce generously over the noodles and vegetables.
  7. 7Sprinkle with scallions and toss everything together before eating.
