Sweet and Sour Pork

Ingredients
- 1 lb pork shoulder, cubed
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 green bell pepper, chunked
- 1 red bell pepper, chunked
- 1 cup pineapple chunks
- 1 small onion, chunked
- 1/3 cup rice vinegar
- 3 tbsp ketchup
- 3 tbsp sugar
- 1 tbsp light soy sauce
- Oil, for deep-frying
Instructions
- 1Coat pork cubes in beaten egg, then dredge in cornstarch until evenly coated.
- 2Deep-fry the pork in batches at 350°F until golden and crisp, then drain on paper towels.
- 3Whisk together rice vinegar, ketchup, sugar, and soy sauce to make the sauce.
- 4Stir-fry the peppers and onion in a wok over high heat for 2 minutes until just tender-crisp.
- 5Pour in the sauce and pineapple chunks and bring to a simmer, thickening slightly.
- 6Add the fried pork back in and toss quickly to coat in the glossy sauce.
- 7Serve immediately over steamed rice.
