Sweet and Sour Pork

Ingredients

  • 1 lb pork shoulder, cubed
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 green bell pepper, chunked
  • 1 red bell pepper, chunked
  • 1 cup pineapple chunks
  • 1 small onion, chunked
  • 1/3 cup rice vinegar
  • 3 tbsp ketchup
  • 3 tbsp sugar
  • 1 tbsp light soy sauce
  • Oil, for deep-frying

Instructions

  1. 1Coat pork cubes in beaten egg, then dredge in cornstarch until evenly coated.
  2. 2Deep-fry the pork in batches at 350°F until golden and crisp, then drain on paper towels.
  3. 3Whisk together rice vinegar, ketchup, sugar, and soy sauce to make the sauce.
  4. 4Stir-fry the peppers and onion in a wok over high heat for 2 minutes until just tender-crisp.
  5. 5Pour in the sauce and pineapple chunks and bring to a simmer, thickening slightly.
  6. 6Add the fried pork back in and toss quickly to coat in the glossy sauce.
  7. 7Serve immediately over steamed rice.
