Ingredients

  • 1 lb fresh wheat noodles
  • 4 oz ground pork
  • 2 tbsp ya cai (preserved mustard greens), chopped
  • 4 tbsp light soy sauce
  • 2 tbsp Chinkiang black vinegar
  • 4 tbsp sesame paste or tahini
  • 2 tbsp chili oil, plus more to taste
  • 1 tsp ground Sichuan peppercorns
  • 2 cloves garlic, minced
  • 4 scallions, chopped
  • 1/4 cup crushed roasted peanuts
  • 2 tbsp vegetable oil

Instructions

  1. 1Stir-fry ground pork in vegetable oil over medium-high heat until browned, then add ya cai and stir-fry another minute.
  2. 2Divide soy sauce, vinegar, sesame paste, chili oil, Sichuan peppercorns, and garlic among four serving bowls.
  3. 3Boil the noodles until just tender, then reserve 1/2 cup of the cooking water.
  4. 4Whisk a splash of hot noodle water into each bowl to loosen the sauce.
  5. 5Add the drained noodles to the bowls and toss well to coat evenly.
  6. 6Top with the pork and ya cai mixture, scallions, and crushed peanuts.
  7. 7Mix everything together at the table before eating.
