Foraging and preserving wild mushrooms is deeply rooted in Polish and broader Slavic culinary culture, where forests have long supplied an important seasonal food source. Pickled mushrooms remain a classic addition to Polish holiday tables, particularly at Christmas Eve (Wigilia) meals.
Ingredients

- 1 1/2 pounds small whole button or wild mushrooms, cleaned and trimmed
- 1 1/2 cups distilled white vinegar (5% acidity)
- 1/2 cup water
- 1 tablespoon granulated sugar
- 1 tablespoon canning salt
- 4 cloves garlic, sliced
- 1 small onion, sliced
- 1 teaspoon whole black peppercorns
- 2 bay leaves
- 3 whole allspice berries
Instructions
- 1Clean the mushrooms by wiping with a damp cloth or a brief rinse, trim the stem ends, and leave small mushrooms whole or halve larger ones.
- 2Blanch the mushrooms in boiling water for 3 to 4 minutes, then drain well.
- 3In a saucepan, combine the vinegar, water, sugar, and salt, bring to a boil to make the brine, add the drained mushrooms, and simmer for 5 minutes.
- 4Pack the hot mushrooms and brine into clean jars along with the garlic, onion, peppercorns, bay leaves, and allspice, leaving about 1/2 inch of headspace.
- 5Let the jars cool to room temperature with the lids on loosely, then seal tightly.
- 6Mushrooms are a dense, low-acid food whose interior may not reliably reach a safe pH throughout even after a vinegar simmer, and no widely validated home water-bath-canning process exists for pickled mushrooms at a strength proven safe for room-temperature storage, so current home food preservation guidance treats pickled mushrooms as a refrigerator-only product rather than a canned one.
- 7Refrigerate the jars immediately, keeping the mushrooms submerged in the brine at all times.
- 8Store in the refrigerator for up to 1 month, and discard if you see any mold, gas bubbles, sliminess, or off odor.
