Giardiniera, an Italian pickled vegetable mix, has roots in Italian preservation traditions but became especially associated with Chicago's Italian-American community, where a spicy oil-packed version became a beloved topping for Italian beef sandwiches.

Ingredients

  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 cup diced red bell pepper
  • 1/2 cup sliced pepperoncini
  • 1/4 cup canning salt (for overnight brine)
  • water, to cover
  • 1 cup distilled white vinegar (5% acidity)
  • 1 cup extra virgin olive oil
  • 2 cloves garlic, sliced
  • 1 tablespoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. 1Wash and cut the cauliflower, carrots, celery, bell pepper, and pepperoncini into bite-size pieces.
  2. 2Dissolve 1/4 cup salt in water to cover the vegetables, brine them in the refrigerator overnight, then drain and rinse well.
  3. 3Bring the vinegar to a boil, add the drained vegetables, and blanch for 2 to 3 minutes to lightly acidify them, then drain, reserving a little of the hot vinegar.
  4. 4Pack the blanched vegetables into clean, dry jars with the garlic, oregano, and red pepper flakes.
  5. 5Cover the vegetables completely with olive oil, adding a splash of the reserved vinegar, and press down gently to eliminate air pockets so every piece stays submerged under the oil.
  6. 6Vegetables packed in oil are a recognized botulism risk because the oil excludes oxygen and creates ideal low-oxygen conditions for Clostridium botulinum unless every piece is reliably and evenly acidified; this quick vinegar-blanch method has not been validated as a shelf-stable process, so this giardiniera must be treated strictly as a refrigerator-only product, never stored or processed for room-temperature shelf stability.
  7. 7Store covered in the refrigerator at all times, keeping the vegetables fully submerged under the oil, and use within 2 to 3 weeks for best quality and safety.
  8. 8Let the flavors meld for 2 to 3 days before serving, and discard immediately if the oil looks cloudy, if bubbles form, or if any off odor develops.
