The Tale of Sadza neMuriwo (Zimbabwean Maize Porridge with Greens)
Story updated
Sadza, Zimbabwe's stiff maize porridge, became the country's staple starch after maize displaced older grains like sorghum and millet, introduced through Portuguese and later colonial-era trade. Served with muriwo, sautéed leafy greens such as collards or rape, it's the backbone of the Zimbabwean table and central to daily family meals.
Ingredients

- 3 cups white maize meal
- 6 cups water
- 1 bunch collard greens or rape, chopped
- 1 onion, chopped
- 1 tomato, chopped
- 2 tbsp oil
- Salt to taste
Instructions
