This dish of leafy greens cooked with tomato and peanut butter reflects a widespread Southern African habit of enriching vegetable dishes with ground peanuts, introduced to the region centuries ago from South America via Portuguese trade. It's a household staple with no single documented origin.

Ingredients

  • 4 cups collard greens or kale, finely chopped
  • 1/2 cup peanut butter
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 tbsp vegetable oil
  • 1 cup water, salt to taste

Instructions

  1. 1Heat oil in a pot and sauté the chopped onion until softened and translucent.
  2. 2Add the chopped tomatoes and cook until they break down into a light sauce.
  3. 3Add the finely chopped greens to the pot and stir to coat them in the tomato mixture.
  4. 4Mix the peanut butter with the water until smooth, then pour it into the pot with the greens.
  5. 5Simmer gently, stirring occasionally to prevent sticking, until the greens are tender and the peanut sauce has thickened, about 15 minutes.
  6. 6Season with salt to taste and serve hot as a side dish with sadza.
