Vitumbuwa, deep-fried banana fritters made from a fermented batter of flour, banana, and sometimes coconut, belong to the same family of East and Southern African fried breads as mandazi and mikate. Popular as a breakfast or teatime snack across Zambia and neighboring Malawi, they show how ripe bananas get put to sweet, humble use in home kitchens.
