Nshima with Ndiwo (Zambian Maize Porridge and Relish)

Ingredients

  • 3 cups white maize meal
  • 6 cups water
  • 1 bunch rape or collard greens, chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. 1Bring water to a boil and whisk in a portion of the maize meal to make a thin porridge.
  2. 2Gradually add the remaining maize meal, stirring constantly with a wooden spoon.
  3. 3Continue stirring vigorously until thick and smooth, about 10-15 minutes; shape into a mound and set aside.
  4. 4Heat oil in a pan and sauté onion until soft.
  5. 5Add tomatoes and cook until broken down, then add the chopped greens.
  6. 6Cover and cook 8-10 minutes until the greens are tender, seasoning with salt.
  7. 7Serve the ndiwo relish alongside the nshima.
