Minnesota Wild Rice Soup

Ingredients
- 1 cup wild rice, rinsed
- 4 cups chicken stock
- 2 tbsp butter
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 2 cups shredded cooked chicken
- 1/2 cup sliced almonds, toasted
- Salt and black pepper, to taste
Instructions
- 1Simmer wild rice in chicken stock 40-45 minutes until tender.
- 2Melt butter in a separate pot and sauté onion, carrots, and celery until softened.
- 3Stir in flour and cook 1 minute, then whisk in half-and-half until smooth.
- 4Combine the cream mixture with the cooked rice and its broth.
- 5Stir in shredded chicken and simmer 10 minutes until heated through and slightly thickened.
- 6Season with salt and pepper and garnish with toasted almonds.
