Memphis Dry Rub Ribs

Ingredients
- 2 racks pork spare ribs, membrane removed
- 2 tbsp paprika
- 1 tbsp brown sugar
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp cayenne pepper
- 1 tsp black pepper
- 2 tsp salt
- 1/4 cup apple cider vinegar, for spritzing
Instructions
- 1Mix paprika, brown sugar, garlic powder, onion powder, cayenne, pepper, and salt into a dry rub.
- 2Coat the ribs thoroughly with the rub, patting it into the meat.
- 3Smoke at 225°F for about 5-6 hours, spritzing with vinegar every hour.
- 4Cook until the meat pulls back from the bone and is tender.
- 5Rest 10 minutes before slicing between the bones.
- 6Serve dry, without sauce, as is traditional in Memphis style.
