The Story Behind It

The Tale of Maine Lobster Roll

Story updated

Maine's version of the lobster roll emerged along the coast in the mid-20th century, dressing cold lobster meat in mayonnaise and piling it into a split-top, griddled hot dog bun. It grew from a fisherman's convenience food into the state's signature summer dish, distinct from Connecticut's warm, butter-dressed variant.

Ingredients

  • 1/3 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 celery stalk, finely diced
  • Salt and black pepper, to taste
  • 4 New England-style split-top hot dog buns
  • 2 tbsp butter, softened

Instructions

  1. 1Gently mix lobster meat with mayonnaise, lemon juice, and celery.
  2. 2Season with salt and pepper and chill briefly.
  3. 3Butter the outsides of the split-top buns.
  4. 4Toast the buns in a skillet over medium heat until golden on both sides.
  5. 5Fill each toasted bun generously with the lobster salad.
  6. 6Serve immediately.
