The Tale of Milanesa a Caballo
Story updated
Milanesa a caballo, a breaded cutlet topped, or "ridden," by a fried egg, descends from the same Italian-immigrant milanesa tradition found across the Río de la Plata region. Uruguay adapted it with the fried-egg topping as a simple, filling home-cooked addition to an already popular dish.

- 4 thin beef cutlets
- 2 eggs, beaten
- 2 cups breadcrumbs
- 4 fried eggs
- Oil, for frying

Instructions
- 1Season the beef cutlets with salt and pepper.

- 4Drain the milanesas on paper towels.
- 5Fry an egg per milanesa, keeping the yolk runny.
