The Tale of Southern Fried Chicken

Southern fried chicken merges Scottish immigrants' tradition of deep-frying chicken in fat with West African seasoning and cooking techniques brought by enslaved cooks, who largely prepared it in Southern kitchens. That fusion, refined over generations by African American cooks, made it a defining dish of Southern cuisine.

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 tsp black pepper, vegetable oil for frying

Instructions

  1. 1Submerge the chicken pieces in buttermilk and refrigerate to marinate for at least 4 hours, or overnight for best results.
  2. 2In a separate dish, combine flour, paprika, cayenne, garlic powder, salt and pepper.
  3. 3Remove the chicken from the buttermilk, letting excess drip off, and dredge thoroughly in the seasoned flour, pressing to adhere well.
  4. 4Heat oil in a deep, heavy skillet to 175C (350F).
  5. 5Fry the chicken pieces in batches, starting skin-side down, until deeply golden brown on both sides and cooked through, about 12-15 minutes total per batch, adjusting heat to prevent burning.
  6. 6Drain the fried chicken on a wire rack.
  7. 7Let rest for a few minutes before serving hot.
