The Tale of Classic Apple Pie
Apple pie recipes trace back to medieval England — apples aren't even native to America, as colonists brought the trees over. The phrase 'as American as apple pie' emerged in the late 19th and early 20th centuries, turning a clearly European dish into a symbol of American identity.
Ingredients

- 2.5 cups all-purpose flour
- 1 cup cold butter, cubed
- 1 tsp salt
- 6-8 tbsp ice water
- 6 large apples, peeled and sliced
- 3/4 cup sugar
- 2 tbsp flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg, 1 egg for egg wash
Instructions
- 1Combine flour and salt, then cut in the cold butter until the mixture resembles coarse crumbs.
- 2Add ice water a tablespoon at a time until the dough just comes together, then divide in half, shape into discs, wrap and chill for at least 1 hour.
- 3Toss the sliced apples with sugar, flour, cinnamon and nutmeg.
- 4Roll out one disc of dough and line a pie dish, then fill with the apple mixture.
- 5Roll out the second disc and place over the filling, crimping the edges to seal and cutting a few slits for steam to escape (or create a lattice top).
- 6Brush the top crust with beaten egg.
- 7Bake at 200C (400F) for 20 minutes, then reduce to 180C (350F) and continue baking until the crust is golden and the filling bubbles, about 30 more minutes.
- 8Cool before slicing.
