The Tale of Luqaimat
These deep-fried dumplings drizzled with date syrup are a beloved Ramadan treat across the Gulf. Food historians see a likely kinship with Indian gulgula fritters, carried across the Indian Ocean trade network; the name itself simply means 'small mouthful' in Arabic.
Ingredients
Scale:· 6 servings
- 2 cups all-purpose flour
- 1 tbsp instant yeast
- 2 tbsp sugar
- 1/2 tsp cardamom
- 1 cup warm water
- 1/2 cup warm milk
- vegetable oil for frying, date syrup or honey for drizzling, sesame seeds for garnish
Instructions
- 1Combine flour, yeast, sugar and cardamom in a bowl.
- 2Gradually add the warm water and milk, whisking to form a smooth, thick batter with no lumps.
- 3Cover the batter and let it rest in a warm place until bubbly and roughly doubled, about 1 hour.
- 4Heat oil in a deep pan to medium heat.
- 5Using a wet hand or spoon, drop small rounds of the batter into the hot oil, frying in batches until golden brown and cooked through, about 3-4 minutes, turning occasionally for even color.
- 6Drain the fried dumplings on paper towels.
- 7Drizzle generously with date syrup or honey and sprinkle with sesame seeds before serving warm.
