The Story Behind It

The Tale of Holubtsi

Story updated

Holubtsi, Ukrainian cabbage rolls stuffed with rice and meat, share their name's meaning ("little doves") with Polish gołąbki, part of the same wide Central and Eastern European stuffed-cabbage tradition shaped by centuries of Ottoman and regional culinary exchange.

Ingredients

Scale:· 6 servings
  • 1 large head cabbage
  • 1 cup rice, parboiled
  • 1 lb ground pork
  • 1 onion, diced
  • 1 carrot, grated
  • Salt and black pepper
  • 2 cups tomato sauce
  • 1 cup sour cream
  • 1 tbsp dill, chopped

Instructions

  1. 1Core and blanch the cabbage, peeling off leaves as they soften.
  2. 2Sauté onion and carrot until soft, then mix with ground pork, parboiled rice, salt, and pepper.
  3. 3Trim the thick rib from each leaf, place a spoonful of filling near the base, fold in the sides, and roll tightly.
  4. 4Arrange the rolls seam-side down in a pot and pour the tomato sauce over them.
  5. 5Cover and simmer gently for 60-75 minutes until the cabbage is very tender.
  6. 6Serve hot topped with sour cream and fresh dill.
