The Tale of Rolex (Ugandan Rolled Chapati and Egg)
Story updated
The Rolex, a rolled chapati stuffed with omelet and vegetables, is a modern Ugandan invention, generally traced to an enterprising chapati vendor in the eastern city of Jinja in the 1990s. It caught on with students at Kampala's Makerere University and spread nationwide; its name is a playful mishearing of vendors' calls of "roll eggs."
Ingredients
Scale:· 2 servings
- 2 chapatis, homemade or store-bought
- 3 eggs
- 1 tomato, diced
- 1 small onion, diced
- 1/2 cabbage, shredded
- 1 green chili, minced (optional)
- 2 tbsp oil
- Salt to taste
Instructions
- 1Whisk eggs with diced tomato, onion, cabbage, chili, and salt in a bowl.
- 2Heat oil in a flat pan and pour in the egg mixture, spreading it into a thin omelet.
- 3Cook until just set, about 2-3 minutes.
- 4Warm a chapati briefly in a separate pan or over the omelet.
- 5Lay the chapati on top of the cooked omelet while both are still in the pan.
