The Tale of Matoke (Ugandan Steamed Green Bananas)
Story updated
Matoke, mashed steamed green bananas, comes from an East African Highland banana variety that likely arrived from Southeast Asia via trade between the first and sixth centuries AD and evolved locally over a millennium in the African Great Lakes region. Especially tied to the Baganda people of central Uganda, it's considered the country's national dish.
