The Story Behind It

The Tale of Luwombo (Ugandan Steamed Chicken in Banana Leaves)

Story updated

Luwombo, meat or chicken slow-steamed in smoked banana leaves, has a documented royal origin: it was reportedly first prepared by Kawuuta, head chef of the Buganda kingdom, and served to Kabaka (King) Mwanga in 1887. Once reserved for royalty and chiefs, it has since spread to become a celebrated dish across Uganda.

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 1 cup ground peanuts
  • 2 tbsp oil
  • 1 tsp curry powder
  • Banana leaves, softened over flame
  • Salt to taste

Instructions

  1. 1Sauté onions in oil until soft, then add tomatoes and curry powder and cook until thickened.
  2. 2Stir in the ground peanuts and a splash of water to make a thick sauce, then season with salt.
  3. 3Toss the chicken pieces in the sauce to coat.
