Ingredients
- 2 cups raw peanuts, ground into a paste
- 1 lb chicken or beef, cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cups water or stock
- 2 tbsp oil
- Salt to taste
Instructions
- 1Heat oil in a pot and brown the meat on all sides.
- 2Add the onion and cook until softened.
- 3Add tomatoes and cook until they break down into a sauce.
- 4Whisk the ground peanut paste with a cup of water until smooth, then stir into the pot.
- 5Add the remaining water or stock and bring to a gentle simmer.
- 6Cover and cook 25-30 minutes, stirring occasionally to prevent sticking, until the meat is tender and the sauce has thickened.
- 7Season with salt and serve with matoke, rice, or posho.
