The Tale of Turkmen Chorba (Ash)
Chorba (or shorba) is a soup name found from the Balkans to Central Asia, rooted in shared Persian and Ottoman culinary vocabulary. Turkmenistan's ash-style chorba, a hearty meat-and-vegetable broth, reflects the country's nomadic herding heritage, where filling one-pot meals suited a mobile lifestyle.
Ingredients
Scale:· 6 servings
- 500g lamb, cubed
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, cubed
- 1 cup chickpeas, soaked
- 2 tbsp tomato paste
- 1 tsp cumin, fresh dill and parsley, salt and pepper to taste
Instructions
- 1In a large pot, brown the lamb pieces with the onion until lightly caramelized.
- 2Add the soaked chickpeas and enough water to cover generously, then bring to a boil and simmer until the meat is nearly tender, about 30 minutes.
- 3Add the carrots and potatoes, and continue simmering until all the vegetables and meat are tender, about 20 more minutes.
- 4Stir in the tomato paste and cumin, and season with salt and pepper.
- 5Simmer for another 10 minutes to let the flavors meld.
- 6Ladle into bowls and garnish generously with fresh dill and parsley before serving with flatbread.
