The Tale of Gutap (Turkmen Stuffed Flatbread)
Gutap are pan-fried stuffed flatbreads long made by rural and nomadic Turkmen households, filled with greens, pumpkin, or minced meat. They're especially associated with Nowruz, the Persian-rooted spring new year celebrated across Turkmenistan, though the dish's everyday origins aren't tied to one documented moment.
Ingredients

- 3 cups all-purpose flour
- 1 cup water
- 1/2 tsp salt
- 2 cups pumpkin, grated, or wild greens, chopped
- 1 onion, finely chopped
- 1 tsp black pepper, vegetable oil for frying
Instructions
- 1Combine flour, water and salt to form a smooth, firm dough; cover and rest for 20-30 minutes.
- 2For the filling, mix grated pumpkin (or greens) with finely chopped onion and black pepper, seasoning to taste.
- 3Divide the dough into balls and roll each out into a thin round.
- 4Spread the filling over one half of each round, then fold the other half over to enclose it, pressing the edges to seal.
- 5Cook the gutap on a dry, hot griddle or lightly oiled pan over medium heat, flipping until both sides are golden and the filling is cooked through, about 4-5 minutes per side.
- 6Brush lightly with oil while hot and serve immediately.
