The Tale of Tajine Tunisien (Tunisian Baked Egg and Meat Pie)
Despite its name, Tunisian tajine bears little resemblance to Moroccan tagine stews — it's a dense baked egg, meat, and cheese pie closer to a quiche, named for the earthenware dish it's baked in. It's a fixture of Eid celebrations and family gatherings across Tunisia.
Ingredients
Scale:· 6 servings
- 6 eggs
- 300g cooked chicken or lamb, shredded
- 1 cup grated cheese
- 1/2 cup cooked chickpeas
- 2 tbsp chopped parsley
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 2 tbsp olive oil, salt and pepper to taste
Instructions
- 1Preheat the oven to 180C (350F) and grease a baking dish with olive oil.
- 2In a large bowl, beat the eggs and mix in the shredded meat, grated cheese, chickpeas, parsley, turmeric and cinnamon.
- 3Season with salt and pepper.
- 4Pour the mixture into the prepared baking dish, spreading evenly.
- 5Bake until the tajine is set in the center and golden on top, about 30-35 minutes.
- 6Let it cool slightly before cutting into squares, as it is traditionally served at room temperature.
- 7Serve as part of a mezze spread or as a light main dish.
