Ingredients
- 2 cups all-purpose flour
- 1 tsp ground turmeric
- 1 tsp cumin powder
- 1 tsp instant yeast
- 1/2 tsp sugar
- 1 tsp salt
- 3/4 cup warm water
- Vegetable oil for frying
- 2 cups cooked and curried chickpeas (channa)
- Tamarind chutney, mango chutney, and pepper sauce, for serving
Instructions
- 1Whisk flour, turmeric, cumin, yeast, sugar, and salt together, then stir in warm water to form a soft, sticky dough.
- 2Cover and let rise in a warm place for 1.5-2 hours until doubled.
- 3Punch down the dough and divide into small balls; let rest 15 minutes.
- 4Flatten each ball into a thin round with oiled hands.
- 5Heat oil to 350F and fry each round for 1-2 minutes per side until puffed and golden.
- 6To assemble, place two fried barra on a piece of wax paper, top with curried channa, and drizzle with tamarind and mango chutneys and pepper sauce.
- 7Fold and serve immediately.
