Ingredients

  • 2 cups all-purpose flour
  • 1 tsp ground turmeric
  • 1 tsp cumin powder
  • 1 tsp instant yeast
  • 1/2 tsp sugar
  • 1 tsp salt
  • 3/4 cup warm water
  • Vegetable oil for frying
  • 2 cups cooked and curried chickpeas (channa)
  • Tamarind chutney, mango chutney, and pepper sauce, for serving

Instructions

  1. 1Whisk flour, turmeric, cumin, yeast, sugar, and salt together, then stir in warm water to form a soft, sticky dough.
  2. 2Cover and let rise in a warm place for 1.5-2 hours until doubled.
  3. 3Punch down the dough and divide into small balls; let rest 15 minutes.
  4. 4Flatten each ball into a thin round with oiled hands.
  5. 5Heat oil to 350F and fry each round for 1-2 minutes per side until puffed and golden.
  6. 6To assemble, place two fried barra on a piece of wax paper, top with curried channa, and drizzle with tamarind and mango chutneys and pepper sauce.
  7. 7Fold and serve immediately.
