The Story Behind It

The Tale of Keke Isite

Story updated

Keke isite is a Tongan sweet treat whose documented history is thin; the name appears to borrow from the English word "ice," possibly referencing a sugared or iced coating. Like much home baking across the Pacific Islands, it's passed down informally rather than through any recorded origin story.

Ingredients

Scale:· 10 servings
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup coconut milk
  • Oil, for deep-frying

Instructions

  1. 1Whisk together flour, sugar, baking powder, and salt in a bowl.
  2. 2Gradually stir in the coconut milk to form a thick, smooth batter.
  3. 3Heat oil in a deep pot to 350°F.
  4. 4Drop spoonfuls of batter into the hot oil, frying in batches so as not to crowd the pot.
  5. 5Fry for 3-4 minutes, turning occasionally, until deep golden brown and cooked through.
  6. 6Drain on paper towels and serve warm.
