The Tale of Sasate Timor (Goat Satay)

Satay traditions spread across Southeast Asia from Indonesian and Malay culinary influence, and Timor-Leste's goat version reflects the island's shared archipelago food heritage alongside centuries of Portuguese colonial presence.

Ingredients

Scale:· 4 servings
  • 600g goat or beef, cut into small cubes
  • 3 cloves garlic, minced
  • 1 tbsp coriander seeds, ground
  • 1 tsp turmeric
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1/2 cup roasted peanuts, ground
  • 1 tbsp palm sugar
  • 1 tbsp tamarind juice, wooden skewers, soaked

Instructions

  1. 1Combine garlic, coriander, turmeric, soy sauce and oil in a bowl, add the meat and toss to coat.
  2. 2Marinate for at least 1 hour.
  3. 3Thread the marinated meat onto soaked wooden skewers.
  4. 4For the peanut sauce, combine ground peanuts, palm sugar, tamarind juice and a splash of water in a small pan, and simmer until thickened.
  5. 5Grill the skewers over hot charcoal, turning frequently, until charred and cooked through, about 10-12 minutes.
  6. 6Serve the satay skewers hot with the peanut sauce for dipping.
