The Story Behind It

The Tale of Ikan Sabuko (Grilled Marinated Mackerel)

Story updated

Timor-Leste's long coastline and seafaring Austronesian heritage made grilled, citrus-marinated fish a staple long before written records began. Ikan sabuko reflects the island's shared culinary vocabulary with Indonesia and the wider Malay world, though no single documented origin exists for this exact preparation.
