Caril de galinha timorense, a Timorese chicken curry, reflects Timor-Leste's Portuguese colonial period, when curry traditions reached the islands partly through Goan-Portuguese trade networks, layered onto Southeast Asian spice influences already present in the region. The result is a distinctly Timorese fusion dish.

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • 2 tomatoes, chopped
  • 2 tbsp vegetable oil
  • 1 bay leaf, salt to taste

Instructions

  1. 1Heat oil in a large pot and sauté onion until soft and golden.
  2. 2Add garlic and ginger, cooking for another minute.
  3. 3Stir in curry powder and cook until fragrant, about 1 minute.
  4. 4Add the chicken pieces and brown lightly on all sides.
  5. 5Add tomatoes and bay leaf, and cook until the tomatoes break down.
  6. 6Pour in the coconut milk, cover, and simmer until the chicken is fully cooked and tender, about 25 minutes.
  7. 7Season with salt to taste and serve with steamed rice.
