Caril de galinha timorense, a Timorese chicken curry, reflects Timor-Leste's Portuguese colonial period, when curry traditions reached the islands partly through Goan-Portuguese trade networks, layered onto Southeast Asian spice influences already present in the region. The result is a distinctly Timorese fusion dish.
Ingredients

- 1 whole chicken, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 cup coconut milk
- 2 tomatoes, chopped
- 2 tbsp vegetable oil
- 1 bay leaf, salt to taste
Instructions
- 1Heat oil in a large pot and sauté onion until soft and golden.
- 2Add garlic and ginger, cooking for another minute.
- 3Stir in curry powder and cook until fragrant, about 1 minute.
- 4Add the chicken pieces and brown lightly on all sides.
- 5Add tomatoes and bay leaf, and cook until the tomatoes break down.
- 6Pour in the coconut milk, cover, and simmer until the chicken is fully cooked and tender, about 25 minutes.
- 7Season with salt to taste and serve with steamed rice.
