The Tale of Bibika Bolu (Timorese Coconut Cake)
Bibika bolu, a Timorese coconut cake, carries its Portuguese colonial imprint right in its name, "bolo" being Portuguese for cake, blended with the coconut-rich ingredients native to Timor-Leste. It's traditionally made for celebrations and special family occasions.
Ingredients

- 3 cups grated coconut, fresh
- 1.5 cups rice flour
- 1 cup palm sugar, grated
- 3 eggs
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1/4 tsp salt, butter for greasing
Instructions
- 1Preheat the oven to 180C (350F) and grease a baking pan with butter.
- 2In a large bowl, whisk the eggs with the palm sugar until well combined.
- 3Stir in the coconut milk and vanilla extract.
- 4Fold in the grated coconut, rice flour and salt until a thick batter forms.
- 5Pour the batter into the prepared pan and spread evenly.
- 6Bake until golden brown on top and a skewer inserted comes out clean, about 35-40 minutes.
- 7Cool before slicing into squares and serving.
