The Tale of Bibika Bolu (Timorese Coconut Cake)

Bibika bolu, a Timorese coconut cake, carries its Portuguese colonial imprint right in its name, "bolo" being Portuguese for cake, blended with the coconut-rich ingredients native to Timor-Leste. It's traditionally made for celebrations and special family occasions.

Ingredients

Scale:· 8 servings
  • 3 cups grated coconut, fresh
  • 1.5 cups rice flour
  • 1 cup palm sugar, grated
  • 3 eggs
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt, butter for greasing

Instructions

  1. 1Preheat the oven to 180C (350F) and grease a baking pan with butter.
  2. 2In a large bowl, whisk the eggs with the palm sugar until well combined.
  3. 3Stir in the coconut milk and vanilla extract.
  4. 4Fold in the grated coconut, rice flour and salt until a thick batter forms.
  5. 5Pour the batter into the prepared pan and spread evenly.
  6. 6Bake until golden brown on top and a skewer inserted comes out clean, about 35-40 minutes.
  7. 7Cool before slicing into squares and serving.
