Tanzanian Pilau

Ingredients
- 3 cups basmati rice, rinsed
- 2 lb beef or goat, cubed
- 2 onions, sliced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 cinnamon sticks
- 6 cloves
- 5 cardamom pods
- 1 tsp cumin seeds
- 4 cups beef stock
- 1/4 cup oil
Instructions
- 1Toast cinnamon, cloves, cardamom, and cumin in oil in a heavy pot over medium heat until fragrant, about 1 minute.
- 2Add onions and fry until deep golden brown, about 12 minutes.
- 3Add garlic and ginger and cook 2 minutes.
- 4Add the meat and brown thoroughly on all sides.
- 5Pour in the stock, bring to a boil, cover, and simmer 30 minutes until the meat is tender.
- 6Stir in the rinsed rice, cover, and cook on low heat 18-20 minutes until the liquid is absorbed.
- 7Let rest 5 minutes, fluff with a fork, and serve.
