The Story Behind It

The Tale of Mishkaki (Tanzanian Grilled Meat Skewers)

Story updated

Mishkaki, skewered and grilled meat, traces back to "mishkak," the Omani term for kebab, reflecting Zanzibar and the Swahili coast's centuries under Omani Arab rule and trade beginning in the late 17th century. Vendors from Zanzibar's Forodhani night market to Dar es Salaam's streets grill it fresh over charcoal, marinated in a fragrant spice blend.
