Ingredients

  • 4 pieces fatir or flatbread, torn into pieces
  • 1 cup qurut (dried fermented yogurt balls) or plain yogurt, thinned
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 onion, thinly sliced
  • 3 tbsp oil
  • Fresh cilantro, chopped
  • Salt, to taste

Instructions

  1. 1If using qurut, soak the dried balls in warm water and mash into a smooth, thin yogurt sauce.
  2. 2Tear the flatbread into small bite-sized pieces and place in a large serving bowl.
  3. 3Pour the yogurt sauce over the bread pieces and toss gently until well coated and slightly softened.
  4. 4Heat oil and lightly sauté the sliced onion until just softened.
  5. 5Top the yogurt-soaked bread with tomatoes, cucumber, and the sautéed onion.
  6. 6Garnish with fresh cilantro and serve immediately, mixing at the table.
