The Story Behind It

The Tale of Tajik Osh (Plov)

Tajikistan's osh, like neighboring Central Asian plovs, developed along Silk Road trade routes and remains the country's most celebrated communal dish, traditionally prepared by men in massive cauldrons for weddings and large gatherings. Its preparation is considered a point of cultural pride and skill.

  • 1 head garlic, whole
  • 1/2 cup raisins
  • 1 tsp cumin seeds
  • 2/3 cup oil
  • Salt and pepper, to taste

  2. 2Layer in julienned carrots without stirring, and cook a few minutes until slightly softened.
