The Story Behind It

The Tale of Fattoush

Fattoush, a Levantine bread salad, grew from frugal "waste-not" cooking, turning stale or twice-fried pita into a fresh, crunchy salad rather than throwing it away. Its tangy character comes from sumac, and it's claimed widely across Syria and the broader Levant as a summer table staple.

Ingredients

Scale:· 4 servings
  • 2 pita breads
  • 2 tomatoes, chopped
  • 1 cucumber, chopped
  • 1 bunch radishes, sliced
  • 1 bunch romaine lettuce, chopped
  • 1 bunch parsley, chopped
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 1 teaspoon sumac

Instructions

  1. 1Toast or fry the pita breads until crisp, then break into small pieces.
  2. 2In a large bowl, combine tomatoes, cucumber, radishes, lettuce, and parsley.
  3. 3Whisk together olive oil, lemon juice, and sumac to make the dressing.
  4. 4Pour the dressing over the vegetables and toss well.
  5. 5Add the crispy pita pieces just before serving to keep them crunchy.
  6. 6Toss gently to combine.
  7. 7Sprinkle with extra sumac and serve immediately.
