The Story Behind It

The Tale of Raclette

Story updated

Raclette gets its name from the French verb 'racler,' meaning to scrape, describing how the melted cheese is pushed off the wheel onto potatoes and pickles. It originated among herders in the Valais canton, where melting cheese by an open fire has been a mountain tradition for centuries.

Ingredients

Scale:· 4 servings
  • 2 lbs raclette cheese, sliced
  • 12 small new potatoes, boiled
  • 8 oz cornichons
  • 8 oz pickled pearl onions
  • 8 oz cured meats (air-dried beef, ham)
  • Black pepper to taste

Instructions

  1. 1Boil the potatoes until tender and keep warm.
  2. 2Set up a raclette grill or place slices of cheese under a broiler on small pans.
  3. 3Melt each portion of cheese until bubbling and lightly browned in spots.
  4. 4Scrape the melted cheese directly over warm potatoes.
  5. 5Serve with cornichons, pickled onions, and cured meats alongside.
  6. 6Repeat with more cheese portions throughout the meal.
