The Tale of Kalops
Kalops, a Swedish beef stew, is believed to derive its name from the English word 'collops,' meaning sliced meat, likely introduced through trade or culinary exchange with Britain in the 18th or 19th century. It became a beloved homestyle Swedish comfort dish, especially in autumn and winter.
Ingredients
Scale:· 6 servings
- 1 kg beef chuck, cubed
- 2 onions, sliced
- 2 carrots, chunked
- 4 whole allspice berries
- 2 bay leaves
- 2 tablespoons butter
- 2 tablespoons flour
- 3 cups beef broth
- Salt and pepper to taste
Instructions
- 1Heat butter in a large pot and brown the beef cubes in batches.
- 2Remove the beef and sauté the onions in the same pot until softened.
- 3Sprinkle in flour and stir to coat the onions, cooking for a minute.
- 4Gradually whisk in the beef broth to avoid lumps.
- 5Return the beef to the pot along with allspice berries and bay leaves.
- 6Cover and simmer gently for 1.5-2 hours until the beef is very tender.
- 7Add the carrots in the last 30 minutes of cooking.
- 8Season with salt and pepper, and serve with boiled potatoes and lingonberries.
