The Tale of Saoto Soup
Saoto soup, a Surinamese chicken soup, descends from Indonesian soto, brought to Suriname by Javanese indentured laborers who began arriving in 1890 to work Dutch colonial plantations. It reflects the lasting culinary imprint of Suriname's Javanese-Surinamese community on the country's food.
Ingredients
Scale:· 6 servings
- 1 whole chicken
- 2 stalks lemongrass, bruised
- 3 cloves garlic, minced
- 1 tablespoon turmeric
- 4 cups bean sprouts
- 4 eggs, hard-boiled and halved
- 2 potatoes, fried and sliced
- Fried shallots for garnish
- Sambal for serving
Instructions
- 1Place the chicken in a large pot with water, lemongrass, garlic, and turmeric.
- 2Simmer until the chicken is fully cooked and tender, about 35-40 minutes.
- 3Remove the chicken, shred the meat, and strain the broth.
- 4Return the broth to the pot and season to taste, keeping it hot.
- 5Divide bean sprouts among serving bowls.
- 6Top with shredded chicken, hard-boiled egg halves, and fried potato slices.
- 7Ladle the hot broth over the top.
- 8Garnish with fried shallots and serve with sambal on the side.
