Surinamese pastei, a chicken pot pie, reflects Dutch colonial influence, pastei being a classic Dutch pie tradition, reworked with Surinamese Creole seasoning and ingredients. It's festive food, often reserved for celebrations and special family occasions rather than everyday eating.

Ingredients

  • 500g chicken, cubed
  • 2 sheets puff pastry
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. 1Sauté the onion and carrot in butter until softened.
  2. 2Add the chicken and cook until browned on all sides.
  3. 3Sprinkle the flour over the chicken and vegetables, stirring to coat.
  4. 4Gradually pour in the broth, stirring constantly, until a thick gravy forms.
  5. 5Add the peas and season with salt and pepper, then let the filling cool slightly.
  6. 6Line a pie or baking dish with one sheet of puff pastry and fill with the chicken mixture.
  7. 7Top with the second sheet of pastry, sealing the edges and brushing with beaten egg.
  8. 8Bake at 200C (400F) for 30-35 minutes until the pastry is puffed and golden.
