The Tale of Surinamese Pastei (Chicken Pot Pie)
Surinamese pastei, a chicken pot pie, reflects Dutch colonial influence, pastei being a classic Dutch pie tradition, reworked with Surinamese Creole seasoning and ingredients. It's festive food, often reserved for celebrations and special family occasions rather than everyday eating.
Ingredients

- 500g chicken, cubed
- 2 sheets puff pastry
- 1 onion, chopped
- 1 carrot, diced
- 1 cup frozen peas
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups chicken broth
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- 1Sauté the onion and carrot in butter until softened.
- 2Add the chicken and cook until browned on all sides.
- 3Sprinkle the flour over the chicken and vegetables, stirring to coat.
- 4Gradually pour in the broth, stirring constantly, until a thick gravy forms.
- 5Add the peas and season with salt and pepper, then let the filling cool slightly.
- 6Line a pie or baking dish with one sheet of puff pastry and fill with the chicken mixture.
- 7Top with the second sheet of pastry, sealing the edges and brushing with beaten egg.
- 8Bake at 200C (400F) for 30-35 minutes until the pastry is puffed and golden.
