Mullah ta'aleya, a fried okra stew, belongs to Sudan's broader "mullah" family of stews built on Nile Valley Arab-African cooking traditions, with okra serving as a common regional vegetable. It's a household dish rather than one tied to a single documented origin.
Ingredients
Scale:· 6 servings
- 1 kg lamb or beef, cubed
- 500g fresh or dried okra, sliced
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon ground coriander
- 4 cups water or broth
- Salt and pepper to taste
Instructions
- 1Heat oil in a large pot and brown the meat on all sides.
- 2Add onion and garlic and cook until softened and fragrant.
- 3Stir in the tomatoes and coriander, cooking until the tomatoes break down.
- 4Pour in water or broth and simmer covered for 35-40 minutes until the meat is tender.
- 5Add the sliced okra and continue simmering uncovered for 15-20 minutes, stirring occasionally, until the stew thickens.
- 6Season with salt and pepper.
- 7Adjust consistency with more water if the stew becomes too thick.
- 8Serve hot with kisra or asida.
