The Tale of Kabkabou

Kabkabou, a Sudanese chicken stew seasoned with dried lime and spices, reflects Sudan's Arab-African culinary fusion, with dried lime (loomi) pointing to Gulf and Arab trade influence. It's festive cooking, often prepared for special occasions rather than everyday meals.

Ingredients

Scale:· 6 servings
  • 1 whole chicken, cut into pieces
  • 2 onions, sliced
  • 3 tomatoes, chopped
  • 2 dried lime (loomi), pierced
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 3 tablespoons oil
  • Salt and pepper to taste

Instructions

  1. 1Heat oil in a large pot and brown the chicken pieces on all sides.
  2. 2Add onions and garlic and cook until softened.
  3. 3Stir in turmeric and cumin, cooking briefly until fragrant.
  4. 4Add the tomatoes and cook until they break down into a sauce.
  5. 5Add the pierced dried limes and enough water to partly cover the chicken.
  6. 6Cover and simmer for 35-40 minutes until the chicken is tender and the sauce has thickened.
  7. 7Season with salt and pepper.
  8. 8Serve hot with rice or kisra.
