The Tale of Ful Sudani (Sudanese Fava Bean Stew)
Ful sudani, a Sudanese fava bean stew, belongs to the ancient ful medames tradition of the Nile Valley, where fava beans have been cultivated for millennia. It remains one of Sudan's most beloved breakfast dishes, simmered slow and eaten with bread.
Ingredients
Scale:· 4 servings
- 3 cups cooked fava beans, with some liquid
- 3 tablespoons vegetable oil or ghee
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 teaspoon ground cumin
- 1 chili, minced
- Juice of 1 lemon
- Salt to taste
- Boiled eggs and flatbread for serving
Instructions
- 1Heat the oil or ghee in a pot and sauté the onion until softened.
- 2Add the tomatoes and cumin, cooking until the tomatoes break down into a sauce.
- 3Add the cooked fava beans with their liquid and bring to a gentle simmer.
- 4Mash some of the beans against the side of the pot to thicken the stew while leaving some whole.
- 5Simmer for 15-20 minutes, stirring occasionally, until thickened.
- 6Stir in the minced chili and lemon juice.
- 7Adjust seasoning with salt.
- 8Serve warm topped with boiled egg halves, with flatbread alongside.
