The Tale of Asida
Asida, a thick wheat or sorghum porridge, is an ancient Sudanic staple often reserved for special or ceremonial occasions, shaped into a mound and served with a savory stew poured over the top. It reflects Sudan's long Nile Valley agricultural heritage.
Ingredients
Scale:· 6 servings
- 3 cups sorghum or wheat flour
- 4 cups water
- Pinch of salt
- 1 tablespoon ghee or butter, for shaping
- 1 tablespoon vegetable oil
- Meat or vegetable stew for serving
Instructions
- 1Bring water to a boil in a heavy pot.
- 2Gradually whisk in the flour to avoid lumps.
- 3Reduce heat and stir vigorously and continuously with a sturdy spoon.
- 4Cook until the mixture forms a smooth, stiff, elastic dough, about 15 minutes.
- 5Add salt and continue mixing until fully incorporated.
- 6Shape into a smooth mound with a wet spoon.
- 7Serve warm with a savory stew ladled around it.
