The Tale of Parippu (Dhal Curry)

Parippu, red lentil curry, reflects lentils' arrival in Sri Lanka via ancient South Asian and Indian Ocean trade routes, becoming a humble but essential part of the island's rice-and-curry meals. It's one of the most common dishes on any Sri Lankan table, simple, mild, and endlessly comforting.

Ingredients

Scale:· 4 servings
  • 1 cup red lentils
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 sprig curry leaves
  • 1/2 teaspoon turmeric
  • 1 green chili, slit
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds

Instructions

  1. 1Rinse the lentils and place in a pot with water and turmeric.
  2. 2Simmer until the lentils are soft and starting to break down, about 15 minutes.
  3. 3Heat oil in a small pan and add mustard seeds until they pop.
  4. 4Add onion, garlic, curry leaves, and green chili, sautéing until the onion softens.
  5. 5Pour this tempering into the cooked lentils.
  6. 6Stir in the coconut milk and simmer gently for 5-7 minutes.
  7. 7Season with salt to taste.
  8. 8Serve hot with rice or hoppers.
