Ingredients
- 2 cups rice flour
- 1 cup coconut milk
- 1 tsp instant yeast
- 1 tbsp sugar
- 1 cup warm water
- 6 eggs, optional (one per hopper)
- Salt, to taste
Instructions
- 1Dissolve yeast and sugar in warm water and let sit until foamy.
- 2Whisk together rice flour, coconut milk, the yeast mixture, and salt into a smooth, thin batter.
- 3Cover and let ferment in a warm place for 2-3 hours until bubbly.
- 4Heat a small rounded hopper pan (or wok) and swirl a ladle of batter around the sides to coat, leaving a thin pool in the center.
- 5Crack an egg into the center if desired, cover with a lid, and cook until the edges are lacy and golden and the center is set.
- 6Carefully remove with a spatula and serve immediately with coconut sambol.
