The Tale of Waat (Greens and Peanut Stew)
Waat, a peanut and greens stew, reflects South Sudan's reliance on groundnuts, a New World crop that spread through Africa centuries ago, paired with local leafy greens. It's a daily staple among Dinka, Nuer, and other South Sudanese communities, valued for its simplicity and nutrition.
Ingredients

- 1 large bunch collard greens or spinach, chopped
- 1 cup ground peanuts or peanut butter
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 chili pepper, chopped
- 2 tablespoons oil
- 3 cups water or broth
- Salt to taste
Instructions
- 1Heat oil in a pot and sauté onion until softened.
- 2Add tomatoes and chili and cook until they break down.
- 3Stir in the ground peanuts or peanut butter, dissolving it into the tomato mixture.
- 4Add water or broth and bring to a simmer.
- 5Add the chopped greens and stir to combine.
- 6Cover and simmer for 20-25 minutes until the greens are tender and the sauce has thickened.
- 7Season with salt to taste.
- 8Serve hot with kisra or asida.
