The Story Behind It

The Tale of Mandazi

Mandazi, East Africa's fried dough, is believed to have spread along the Swahili Coast through centuries of Arab and Indian Ocean trade influence. It's now a common breakfast and snack food across East and Central Africa, including South Sudan.

Ingredients

Scale:· 8 servings
  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1 cup coconut milk
  • 1 egg
  • Pinch of salt
  • Oil for deep frying

Instructions

  1. 1In a large bowl, combine flour, sugar, baking powder, cardamom, and salt.
  2. 2Whisk the egg into the coconut milk, then add to the dry ingredients.
  3. 3Mix and knead into a soft, smooth dough.
  4. 4Cover and let rest for 20-30 minutes.
  5. 5Roll the dough out and cut into triangles or squares.
  6. 6Heat oil in a deep pot to medium heat.
  7. 7Fry the dough pieces in batches until golden brown and puffed, turning occasionally.
  8. 8Drain on paper towels and serve warm.
