The Story Behind It

The Tale of Ful Medames

Ful medames, stewed fava beans, is one of the oldest dishes in the Nile Valley, likely originating in ancient Egypt and spreading south along the river into Sudan and South Sudan over centuries. It remains a staple breakfast across the region, simple and filling.

Ingredients

Scale:· 4 servings
  • 2 cans fava beans, drained (or 2 cups cooked dried fava beans)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 2 lemons
  • 1 tomato, chopped
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1Place the fava beans in a saucepan with a little of their liquid and heat gently.
  2. 2Mash some of the beans lightly with a fork while leaving others whole for texture.
  3. 3Stir in garlic, cumin, salt, and pepper.
  4. 4Simmer for 10 minutes to let the flavors meld.
  5. 5Stir in lemon juice and half the olive oil.
  6. 6Transfer to a serving bowl and top with chopped tomato and remaining olive oil.
  7. 7Garnish with fresh parsley.
  8. 8Serve warm with flatbread.
